Two days clean! ;)

Quick post because I'm a very sleepy girl and ready for bed! Long night at work last night and tonight, and accounting exam this morning.

Today was my second day being a good little vegan!

So yesterday I had: a kiwi... cucumber, tomato, & onions with olive oil, balsamic vinegar, and salt and pepper... celery with hummus... a banana... & Starbucks iced coffee (vegan style)

Today there was much more: a kiwi... an avocado... coffee... lots of celery and hummus (LOVE the roasted red pepper hummus!)... a banana... some pineapple... black beans... broccoli... & brussel sprouts.

I feel like I ate a lot today! I'm interested to see if there will be an effect on my weight. I *feel* like I'm eating more, but everything I'm eating is so much healthier and much of it is lower in calories. And maybe I just feel like I'm eating more because I'm eating more frequently, but just smaller portions? I'm not sure yet. The fats I am eating (avocados, for example) are good fats. So it'll be interesting to see if there is a change.

After this week, whether I decide to stick to vegan or not, I definitely plan on making a change and incorporating much more of these healthy things into my everyday diet. If I do eat meat, I am going to be very picky about it and it will be the good kind. I don't want any hormones, fillers, anything from those poor chickens and cows that are so mistreated... nope, none of that. And I'd like to steer clear of GMOs. Ick. Anyway, though... it'll be easier after this week to eat more "meal" type things, even if I do continue on with the whole vegan thang. This week I'm really trying to cleanse and detox from all of the carbs  and processed crap that I usually consume, but next week I plan to at least incorporate some brown rice, pastas, more nuts, etc.

Who the hell would've thought I'd turn into a tree-hugging hippie at the age of 28?! Well maybe I wouldn't go that far, but I do make my own freaking laundry detergent. Haha. How 'bout that.

First post. Holla.

This blog is intended to be an outlet for whatever I feel like writing about... whether it's my kiddos, rainbows and unicorns, the ridiculously long line at Starbucks yesterday, or whatever other musings this frazzled mom has going on in her ginormous noggin! It really is huge. No shame.

Tomorrow I'm starting a week-long vegan diet. Therefore, I thought today would be a good day to start writing and documenting. I don't know that I plan on being a vegan forever, but it's definitely something that I'm giving some serious thought to. Whatever becomes of it, I've decided to do it for a week... just to do it, to see how I feel after a week, if I feel any changes...  ya know. 'Cause I want to! ;)

I'm kind of a picky eater, especially about meat. I am not a huge fan of chicken. I hate big thick juicy chicken breasts; they just disgust me. The only chicken I really care for is my mom's very thin chicken cutlets, and she cooks them extra for me. Ha. Thanks, Mom. Anyway, lately I've just been becoming more and more disgusted (and a little OCD) about what I eat, especially in the way of meat. I don't know why. It wasn't a conscious decision... until now. Meat has been grossing me out more and more, I find fast food to be disgusting (mainly any meat), and I've been paying more and more attention to the crap that goes into the everyday snacks that I thought were healthy for my kids. So I decided that we'd start eating healthier and paying more attention to what we eat. I thought challenging myself to eat nothing but fruits and veggies for a week would be good to try.

Last night, I decided to watch Food, Inc. I'd heard about it a while back and here and there, but I didn't really want to watch it then because I didn't want to be grossed out by all the food I wanted to eat. Now that I already am, though... thought I'd give it a go.

So gross. Disgusting. It really just reaffirmed the way I've been feeling and made me want to take this challenge even more seriously. To see the way the animals are treated, learn about all of the disgusting things that goes into making the vast majority of food we eat every day, how the food industry tries so hard to keep us in the dark... It really was pretty eye-opening. Did you know that the average hamburger is made of about 1000 cows? ONE hamburger... ONE THOUSAND cows. *shudder* My disgust for meat will hopefully make this week (and possibly after?!) a bit easier. It's the little things that you don't really think about that are going to be harder... milk, eggs, butter, even vitamin D3! Those ingredients that go into so much are the bigger challenge.

Here goes nothing. As long as I can have my Starbucks (albeit with soy milk now), I have faith.
